Protein Mug Cake

I have had long days where all I want is a warm gooey chocolatey dessert. Since I can’t have that, I have been playing around with protein dessert recipes lately. I have enjoyed making up new things. I have a sweet tooth, which makes cravings and resisting cravings really tough. But when I can sit down at night and make something fun and healthy, it definitely makes it all worth it. So, here I have one of my chocolate protein cakes.

Cake:

  • 1 scoop protein (I used quest – as it cooks up nicely)
  • 1 egg white
  • 1/8 teaspoon Baking Powder
  • 2-4 tablespoons of water (want cake like consistency)

Frosting:

  • 10 Almonds chopped
  • 2 tablespoons Protein Powder
  • 1 tablespoon of water

Directions:

  1. Combine all ingredients for the cake. Mix until you have a cake batter consistency.
  2. Microwave for approximately 60 seconds in any microwavable safe cup/bowl. (I do 2 – 30 second intervals)
  3. Mix protein powder and water for frosting – should be a bit thinner.
  4. Once cake is done and out of microwave, top with ‘frosting’ and chopped almonds.
  5. Enjoy slowly! 🙂
